Travelling to Porto from Canada:

From Toronto there are direct flights on Air  Canada and Air Transat to Porto (not every day).

Air Canada and Lufthansa have daily flights from Toronto, Ottawa, Montreal, Calgary and Vancouver to Frankfurt and from here there are connecting flights to Porto
 

Departing from Santiago:
From Santiago de Compostela there are direct buses (about 3 hours) to return to Porto.  The bus stops at the Porto Airport but, depending on the flight time, it is usually necessary to spend the night.
OR
From Santiago it is possible to fly or take a train to Madrid and from there fly to Canada on Lufthansa or Air Canada.
